The event is conceived as an evening in which the conversation about the future of the island takes place around the table. Food is not just a service, but a methodology: through shared cooking and dining, questions of climate change, global food chains, tourism and the new social structure of the island are raised.
The dinner is inspired by the Naan Aligned Cooking method, which ISSA - "School of Autonomy" together with Kevin Kenjar has been developing since 2024, and it is deliberately not limited to "local" ingredients. The menu reflects the reality of the modern island: a combination of what comes from the sea and fields, but also what arrives by ferry from global logistics chains - from supermarkets, warehouses and distribution centers.
In this hybrid food space, a new social reality of the island also appears: foreign workers, seasonal workers and migrants who are already shaping tourism and hospitality in Croatia today. Among them are workers from Nepal, the Philippines, India and other countries, whose culinary traditions are becoming part of the everyday life of the island's cuisines.
